- 2 pounds total of sweet potatoes and butternut squash, halved or quartered
- Avocado or olive oil spray
Instructions
- Preheat the oven to 375°F
- Cut sweet potatoes and butternut squash into cubes
- Lightly spray foil or parchment paper with avocado or olive oil to prevent sticking
- Place cubes on baking sheet
- Lightly spray potatoes and squash with oil
- Roast for about 60 minutes, or until tender and golden brown around the edges.
- The timing will depend on the size of cubed and amount that you are cooking.
