High protein, high fiber, healthy holiday entrée that is also great for leftovers!
Ingredients
- 8 lb turkey
- 1 onion chopped
- 16 oz fresh button mushrooms chopped
- 2 Tbsp evoo
- 10 oz frozen chopped spinach box, thawed and squeezed to remove excess liquid
- 2 tsp salt
- 1 ¼ tsp black pepper
- 0.5 lemon
Instructions
- Preheat oven 350 degrees
- Heat 1 tbsp EVOO in skillet, add onions, mushrooms and saute 8-10 min
- Stir in spinach and cook off excess liquid (5 min)
- Add salt and pepper
- Rub turkey breast with lemon
- Season turkey skin with salt/pepper (other half)
- Separate skin from breast
- Stuff filling under skin
- Roast at 350 degrees for 1 hour
- Turkey temp 165=170 degrees
- Baste every 30 mins after the first hour (additional 1-1.5 hours) until internal temp 170 degrees
